We harvested these plums on a beautiful morning in July 2020, in the beautiful orchard of a retired teacher, named Willy. His field is located on the Wijngaardberg, on the border between Gelrode and Rotselaar. We macerated the whole plums (with pit) for almost five months in an oak barrel. We used two year old lambic for the maceration and young
